The vineyard of Paradis Casseuil is planted with Merlot and Cabernet Sauvignon, the classic pairing you find in almost all red Bordeaux blends. The Merlot brings juicy red fruit and the Cabernet Sauvignon brings structure and body. On the nose there’s delicate toasted notes with peppery red cherry and almonds. The palate is elegant and medium bodied with redcurrants, red cherry and spice. This easily accessible claret is perfect for drinking this year, but will hold in the cellar for a couple of years. Enjoy with roast chicken.

Waddesdon Pauillac 2015, by Chateau Mouton A.C. Pauillac
£32.50More info & buy After an hour in a decanter our Waddesdon Pauillac awakens from its slumber to reveal a nose of cassis, charred vanilla, cedar, black cherry and cedar. There's evidence of the ripeness this vintage possesses with a plump fruit-forward entry to the palate which is tapered by fine tannins and well balanced acidity. It's clearly Pauillac and true to the 'house' style - yet it's accessible and attractive now and doesn't require a decade patiently waiting in the cellar.
